Amaranth Stir Fry
Amaranth, also known as Chinese spinach, comes in two varieties: Purplish pink and green. The flavor is basically the same, although the pink variety adds a bit of flair toa relatively easy-to-prepare dish. When buying amaranth, do not include its flowers and always choose fresh tender leaves with soft stems.
-1 pound amaranth
-2-3 tablespoons vegetable oil
-4 cloves garlic finely chopped
-1 teaspoon sesame oil
-Salt and sugar to taste
Wash the greens after trimming off the rough ends of the vegetable.
Preheat your frying pan until it’s smoking. Then add the vegetable oil and swirl it evenly on the pan. Toss in the garlic together with the amaranth, always stirringconstantly.
Add salt and sesame oil to the pan and cook until nearly wilted.
To bring out the flavor of the amaranth you may choose to add sugar to even out the saltiness.
A crucial technique when it comes to cooking is to pile the vegetables at the center of the pan to allow the heat to cook the greens evenly. Finally, cover the panwith a lid and allow the vegetables to cook for about 1-2 minutes. Give the dish a final stir before serving.
