All In Arugula Salad with Walnut Vinaigrette
Arugula is a green leafy vegetable with a distinctly pungent aroma. Also called “Rocket” since the time of ancient Rome, it was once considered as a strong aphrodisiac. Nowadays it is widely used as a main ingredient for salads that are relatively simple to prepare. You can have the arugula on its own or with dressing and vinaigrette. A dressing that goes very well with arugula salad is walnut vinaigrette. Garnish it liberally with walnuts, and you’re all set!
Ingredients for Walnut Vinaigrette and Arugula Salad
-A tablespoon of lemon juice
-A cup of water
-A half-cup of vinegar
-A shallot, finely minced
-Salt to taste
-½ tablespoon finely ground pepper
-1 teaspoon of olive oil
-A cup of toasted walnuts
-80 grams Arugula
Directions:
Wash the arugula and place them in a container together with half the toasted walnuts. Set aside.
Place the shallots, water, vinegar and the rest of the walnuts in a blender or food processor. Set at high speed. Gradually add the olive oil as you are blending the ingredients. Add the pepper and salt to taste. Once the vinaigrette attains a smooth texture, drizzle onto the salad and serve.
